Many start the day with others over a delectable breakfast of scrambled eggs, fresh bread, smoked salmon, and a glass of champagne. Groups also gather at memorials and cemeteries where wreath-laying ceremonies are held in honor of past Norwegians who made the country what it is today. On this day in 1811, the South American country officially declared its sovereignty from Spain. On Independence Day, a sea of straw hats and vibrant blouses fill the streets as Paraguayans flock to parades and concerts. It’s also popular for families and friends to host asados — and break out traditional dances like the polka or galopera. Whether people are at home or in the streets, they’re probably flying the tricolor red, white, and blue national flag. As depicted in today’s artwork, Paraguay’s flag is especially unique compared to other countries. The holiday, also known as Yom Ha’atzmaut, always falls on the 5th day of the Hebrew month Iyar, but it may be moved a day or two so the holiday doesn’t fall on the Sabbath. The nation starts celebrations at sunset. In Jerusalem, government officials typically give speeches, and 12 torches that represent the 12 tribes of Israel are lit at a ceremony.
